Apple [Zucchini] Pie


I had this pie while visiting Kristen and Andrew; Andrew's mom made it for Sunday dinner and everyone was so excited to have apple pie for dessert. Well, little did we know we were really eating ZUCCHINI PIE. It tastes and looks just like apple pie, but is made with zucchini.
So, when Brei sent me home with the largest zucchini I had ever seen, I was excited to trick my friends too.

Ingredients for the filling:
6 cups of zucchini peeled, seeded, sliced
1 1/4 cups white sugar
2 tbsp. all purpose flour
1 1/2 tsp. ground cinnamon
1 1/2 tsp. cream of tarter
2 tbsp. lemon juice
1/8 tsp. salt
1/4 tsp. ground nutmeg
1 tbsp. butter, diced

Peel zucchini and slice it lengthwise. Scoop out seeds with a grapefruit spoon or knife; now you have a "boat shape"- slice evenly so the squash looks like apple slices.
Boil zucchini until tender- about 4-5 mins. after it begins to boil. Drain and let stand in cold water for about 5 minutes, then drain really well. Toss with lemon juice.
Mix sugar, flour, cinnamon, cream of tartar, salt, and nutmeg in a bowl. Toss the squash with the sugar mixture and mix well. Set aside.

Ingredients for pie crust
(or just use mom's recipe from the family cook book)

2 cups flour
1 tsp. salt
1 cup Crisco
1/2 cup ice cold water

Pour flour into a bowl and sprinkle with salt- mix well. Cut Crisco into flour with pastry blender by hand or with electric mixer's wire whisk. Add cold water all at once and mix. Place dough onto floured dishtowel and roll with floured rolling pin into a circle slightly larger than a 9 inch pie plate. Sprinkle a little flour on the bottom of the pie plate. When dough is rolled out, fold the dough circle in half and lift with with the dishtowel- slip into pie pan and unfold. Pat the crust into pan and over the edge. With your right thumb push the dough forward with to create the rippled crust.
If you want a crust topping double this dough recipe to make two dough balls.
If you want a streusel topping (which tastes excellent with this recipe) use the following ingredients.

Ingredients for Streusel Topping:
1/2 cup butter
3/4 cup flour
3/4 cup rolled oats
1/2 cup brown sugar
1 tbsp. cinnamon

Mix together until crumbly- it can be made ahead of time and kept in the refrigerator until needed.

Pour filling into pie pan (with the crust already in the pan of course), and sprinkle streusel topping. Bake at 400 F for 40-50 mins. If using a crust topping, bake at 350 F for 25 mins.

This is a great April Fools pie. Or if you want to give it a try and not tell your kids, husband, friends, etc. they will never know it's zucchini and not apple...I promise!
I promised all my friends $10.00 if they could guess the secret ingredient...no one got it, and most couldn't believe it was zucchini :)
