Sorry...I forgot to take pictures, but this was REALLY good. Made it last night for my weekly Sunday dinner with friends, and there was nothing left over...
12 oz pappardelle noodles
2 tbls olive oil
1 medium red onion, thinly sliced
2 cloves garlic, thinly sliced
5 medium zucchini (about 1 1/2 pds)
1 1/2 pds chicken cutlets, cut crosswise into 1/2-inch strips
1 tbls curry powder (I actually used like 2 tbls..you could probably even use more)
3/4 cup unsweetened cocunut milk
1. cook the noodles according to package directoins. drain, reserving 1/2 cup of the cooking water
2. in large skillet, heat the oil over medium heat. add the onion and garlic, and stir-fry until tender (about 7 minutes)
3. meanwhile, use a vegetable peeler to cut the zucchini lengthwise into wide, thin ribbons.
4. add the zucchini, chicken, curry powder and salk to the skillet and cook, stirring frquently, until the zucchini begins to soften (about 5 minutes). add the reserve water and cook for 3 minutes. add the cocunut milk and simmer until slightly thickened (about 2 minutes). toss with the pasta (or rice if preferred) and serve!
