Chicken Dumplings

Yep, another winter warning was issued last night. I thought- we could have frozen pizza or soup. I went for the soup because I have been feeling good this week and figured we'd have the pizza when we were in desperate need of food- last night was not the case. It also was a cold dreary day. So I made one of Ben's favorite comfort foods- Chicken and Dumplings. It was another fast and easy recipe, and we had all the ingredients, which is a winner with me.

Makes ~4 servings:


Ingredients
1 Tbsp butter or olive oil
3-4 celery stalks, chopped
1 1/2 C carrots, peeled and sliced
6 C of chicken broth
salt & pepper to season
2 chicken breasts, cooked and cubed (or shredded)
2 1/4 C Bisquick
2/3 C milk
1/2 C sour cream

In a large, heavy pan saute celery and carrots in butter/oil for about 5 minutes. Add in the broth and seasonings and bring to a boil. Reduce heat and simmer for 5-10 minutes. Add in chicken.

Make dumplings: Combine Bisquick milk and sour cream.

Drop dumplings by the spoonful onto simmering broth. Cover pan and simmer for 10-15 minutes or until the dumplings are cooked through (insert a toothpick) Do not lift cover while cooking.
