Ingredients:
2.5-3 lbs. chicken tenders (or chicken breasts cut into thick strips)
1/2 c. balsamic vinegar
2 cloves garlic, minced
4 Tbsp. olive oil
Salt & Pepper
2 Tbsp. butter
4 Tbsp. balsamic vinegar
6 Tbsp. honey
Mix 1/2 c. balsamic vinegar, minced garlic, half of the olive oil, and salt & pepper. Marinate the chicken in this for at least 30 minutes. (Slice the chicken open a bit for the flavor to get inside if you want.)
When you're ready to cook, heat the other half of the olive oil in a large skillet over medium heat. When it is hot, cook the strips until browned on both sides (2-3 minutes each side). You may have to do this in several batches. Place cooked chicken on clean plate.
Turn the heat down to medium-low and add the butter and other balsamic vinegar to the skillet. Use a spoon to stir the mixture and dissolve the sticky bits off the bottom of the skillet. Once the mixture has dissolved together, add the honey, increase the heat, and allow the sauce to simmer until thickened (about 5 minutes).
Once the sauce has thickened, season to taste with salt and pepper. Add the chicken back to the skillet and toss to coat in the warm balsamic sauce. Serve immediately.
We had some yummy bread, a nice salad, and some Parmesan orzo with this tonight and everyone devoured it-even all 4 kids! This recipe is doubled from the original for our size of family, so it can easily be halved.
