Didn't feel like making fancy dinners this week since we're getting ready to head off to Maine [be jealous], but found this on Pinterest [here] and thought it looked yummy so we tried it. And LOVED it. It's for a 9x9 pan but could easily be doubled for you bigger families. In the 9x9, we had enough leftovers for 3 more servings.
Ingredients:
1 pound ground beef
1 taco seasoning packet
2/3 cup water [or whatever your taco seasoning packet says]
Fritos Chili Cheese corn chips
1 can cheddar cheese soup
1/2 cup milk
8-12 ounces shredded mozzarella
Toppings as desired [we just used shredded lettuce as a base and it was perfect but you could throw in tomatoes, avocados, salsa, whateves]
Instructions:
1. Brown ground beef and add taco seasoning and water [follow instructions on taco seasoning].
2. Pour enough Fritos into the bottom of the 9x9 pan to cover/per taste.
3. Pour ground beef over chips.
4. Combine soup and milk in a small saucepan and heat thru until smooth.
5. Top taco meat with cheese sauce.
6. Add shredded mozzarella cheese to top -- however much you want.
7. Bake at 350 degrees for 10-15 minutes until cheese is melted and bubbly.
8. Serve over lettuce and desired toppings.
