Cornbread Waffles with Chili

So, I was a little hesitant to make this for dinner because it's something a little outside our "comfort" zone as far as dinner goes.  But we LOVED it!!  Especially Brad, which means it's a winner.  It's another one from my friend's blog [click here for her recipe].  It was perfect for a cool, autumn evening.  And super quick to make.  Her recipe says it makes 7 cornbread waffes; we used it in our Belgium waffle maker [not like Dad's, because we don't have one of those yet...] and it only made 3 1/2 waffles [maybe it was a deeper waffle maker than what she uses].  It was enough to feed all of us with about 1 waffle left over [which we just froze and then popped in the toaster the next day for leftovers].

Ingredients:
1 cup cornmeal
1 cup all-purpose flour
1 Tablespoon baking powder
1/2 cup sugar
1 teaspoon salt
1 cup milk
1 egg
1/4 cup butter, melted
2 cans of your favorite chili [we only used one and it was perfect for our little family]
Toppings that you want [cheese, sour cream, etc.]

Directions:
1. Whisk the cornmeal, flour, baking powder, sugar, and salt in a bowl.  Add the milk, egg, and melted butter.  Whisk until blended.
2. Heat your waffle maker [ours is a little knob with no numbers and we had it between a medium and high heat] and spray with non-stick spray.
3. Pour batter into the waffle maker.
4. Cook according to waffle maker directions.
5. Serve with heated chili and toppings.

So yum!
