slow cooker butter chicken

Again, another yummy meal - and super easy because I used the crock pot.

Ingredients

1 lb. boneless, skinless chicken breast or thighs (I used 3 breasts)
1 medium onion, diced
2 tsp. coconut oil
4 cloves garlic, finely minced
1 tsp. fresh ginger, minced
1 tsp. coriander
1 tsp. cumin
1 tsp. cardamom
1/2 tsp. salt
1/4-1/2 cayenne pepper (optional - didn't use it knowing Avery wouldn't like the "spice")
1 14 oz. can coconut milk
1 6 oz. can tomato paste
juice of 1 lime
cilantro to taste

Instructions

In a medium saute pan, heat coconut oil over medium heat.
Add onion and saute until translucent and fairly tender.
Add garlic, ginger, spice, and salt.
Cook 1 min. longer, until all the spice are fragrant.
Stir in the coconut milk and tomato paste and stir until well combined.

Add the chicken to the crockpot.
Pour the sauce over everything. 
Cook on high heat for 3-4 hours or low heat for 6-8 hours. 
Shred or dice chicken into the sauce, squeeze in the lime juice, and top with cilantro.
Serve with rice, naan, and veggies.
