This recipe comes from Ben's Aunt Sasi - I haven't made it for years, but some comfort food sounded good, and this meatloaf is so full of yummy flavors and tasty, I love it! By following this recipe, we had plenty for dinner (one bread loaf worth with leftovers), and enough meat for a second batch (which I froze). So for a small family, you could easily half the recipe, or make the full recipe and share/freeze. Enjoy!
2 tablespoons
butter
2 carrots, finely
diced
1 onion, finely
chopped
1 zucchini finely
diced
2 crushed garlic
cloves
2 teaspoons ground
cardamom
1 teaspoon cumin
1/2 teaspoon
cinammon
1/4 teaspoon red
pepper (cayenne)
1/4 teaspoon ground
black pepper
2 lb. ground meat (beef/lamb/turkey - whatever your choice of meat is)
2 eggs
1 cup fresh bread crumbs
1/2 cup plus 2
tablespoons ketchup (leave some of this to spread on top of loaf before
baking)
1/3 cup plain
yogurt or sour cream
2 teaspoons salt
saute vegetables in
butter; add spices
add this
combination to meat that has been cooked
add rest of
ingredients
bake about one hour
at 350
