Creamy Taco Chicken

Oh.My.Heavens.
You will be in heaven after you eat this, not only because it tastes AHHHHH--mazing but because it requires only 3 ingredients to make and it's a crock pot recipe [you guys should be kissing my feet right now].  We had it for dinner one night and then for leftovers for the next 3 days and it still tasted wonderful [and I hardly ever eat leftovers].  And I would've taken a picture of what it looks like but I was always too excited to eat it then to grab my phone and snap a picture.  Just visit the link if you want to see it :)

Ingredients:

3 boneless skinless chicken breasts
1 can of original Rotel tomatoes with green chilies
4 ounces cream cheese

Directions:

1. Put chicken in crock pot and cover with Rotel tomatoes.
2. Cook on low for 6-8 hours [mine were done after 5].
3. 30 minutes before the end of cooking, shred chicken.
4. Place cream cheese on top of chicken [but don't stir it in] and continue to cook for the remaining 30 minutes.
5. When time is up, stir cream cheese into chicken mixture.

The link I got this from [click here] mentioned that you can use the chicken for tacos, quesadillas, over rice, in enchiladas, whatever.   We just ate it as soft tacos [we probably made a total of 16 tacos using the small flour tortillas, to give you an idea of how much this makes] with some shredded cheddar cheese and then I made the Cafe Rio salad dressing [the tomatillo one] and put a little bit of that on top. That's it, no lettuce, no tomatoes, no guacamole, the chicken was deee-licious solo .  You'll thank me after you try it.  So good.  So good.

Ingredients:

1 1 ounce Hidden Valley Ranch dressing packet
1 cup buttermilk
1 cup mayo
1 large or 2 small tomatillos
1 clove garlic, minced
1/2 bunch cilantro
1/2 teaspoon lime juice
1/2 to 1 small jalapeno, seeds removed

Directions:

Blend all the ingredients in a blender and store in the refrigerator for flavors to meld [just like salsa, it will get hotter the longer it sits].
