Italian Sausage and Pepper Pasta


This is the second time to make this dish- and we LOVE it; plus it is pretty darn healthy.

Ingredients:

1/2 pound raw turkey sausage, italian style, casing removed
2 tsp. olive oil
2 medium yellow (or orange) peppers diced in large chunks
1 medium onion thinly diced
1 1/2 tsp. minced garlic
28 oz. can crushed tomatoes, fire roasted recommended
1/4 tsp. salt
1/2 tsp. oregano
1/2 tsp. basil
8 oz. uncooked pasta (I always use Baratolli for it's nutritionist facts)

* This time around I added 1/2 can of tomato sauce, and it made it more saucy and less chunky)

Bring a large pot of water to a boil.

Meanwhile, in a large nonstick skillet over medium-heat cook sausage stirring and breaking up the meat with a wooden spoon until cooked- about 3-5 minutes; remove to a plate.

Heat oil in the same skillet. Add peppers and onion, stirring frequently until veggies are lightly colored and crisp- about 5 minutes.

Add garlic, tomatoes, turkey, and all the seasonings. Stir everything together and bring to a boil, reduce the heat and let simmer on low until veggies are tender and sauce is warmed -about 10 minutes.

While sauce simmers, add pasta to the boiling water and cook accordingly. Drain the pasta. You can either mix pasta and sauce together, or pour sauce over a bowl of pasta.

This makes about 6 servings, with 1 1/3 cup for each serving. Yumminess.
