Super fast and easy chicken noodle soup


Last night I made chicken noodle soup for the first time- super easy, so much less sodium than a can, and tasty...gonna eat this for lunch today

Ingredients:

1 tbsp. olive oil
1/2 onion, chopped
4 carrots, chopped
4 celery stalks, chopped
~10 cups chicken and/or vegetable broth
~4 chicken breasts, cut into bit-sized chunks
1 1/2 cup egg noodles
1/2 tsp. oregano
1/2 tsp. basil
salt and pepper to taste

Boil a large pot of water, and throw the chicken in, letting it cook (about 20 minutes). I threw the chicken breasts in whole and let them cook while I prepped all the other ingredients. When they were done, I let them sit on a cutting board until they cooled a bite, and then cut them up into bit sized chunks.

Heat the oil in a large pot and cook the onion and celery until tender, about 5 minutes. Pour in chicken, broth, carrots, and seasonings. Bring to a boil, then let simmer for 20 minutes.

It makes about 6 servings, and you can add more veggies, chicken, broth, or noodles as you please.
