Beth (Ben's sister-in-law) makes these every year for Thanksgiving. They are hands down THE BEST dish at the table (her pineapple something or another comes in 2nd). I have to always ask her to send me the recipe because I love it so much. Made this for our Thanksgiving with friends. yummers.
3 c. mashed sweet potatoes (may use 2 cans but I use fresh)
1/2 c sugar
1/2 c butter
2 eggs, beaten
1 tsp. vanilla
1 c. milk
Topping:
1/3 c melted butter
1/2 c flour
1 c lt brown sugar
1 c chopped pecans
Cook and mash potatoes. Mix together sugar, butter, eggs, vanilla and milk. Add in potatoes. Pour into 9x13 baking dish
Prepare topping: blend butter, sugar and flour, adding pecans. Spread over mashed potatoes.
Bake at 350 for about 30 minutes
